Quail Change

Good Afternoon, From Wednesday there will be a change to the Quail, We will be Serving The Truffle at the Table. I have ordered in some Bowls, White Gloves & Truffle Slicer. These will be found in the draw near the pass. They need to all be returned here by the end of service Clean & Polished. When Setting up the pass you will need to set up a Truffle Tray. This is using One Large Brown Tray & Legs. Place this Infront of the radiator near the pass. On This need to be the two bowls with barley & truffle, Two Pairs of Gloves, Two Truffle Graters, Napkin to wash the grater when it returns. When serving the Quail, the person serving must have the gloves on before entering the restaurant, On The Tray there must be The Dish, The Truffle Bowl & The Grater Sat on a cutlery Board. The Waiter then takes the dish off first, the places the truffle bowl on the table & Take the Grater & Board of the tray. Grate the Truffle & then when done put the truffle bowl on the cutlery board & the grater and take this back to the truffle tray for the person on the pass to clean & sort. The person on the floor is not to clean this and is to return straight to the floor. -Jordan
