Paul is the Head Chef at The Forest Side, a Michelin-starred restaurant and luxury hotel located on the edge of Grasmere in the Lake District.
Since taking the helm in November 2019, he has solidified the restaurant's reputation of culinary excellence, recently earning a Michelin Green Star (2026) and 5 AA Rosettes (2025) alongside the restaurant's Michelin Star.
