About the Dish
Using a teaspoon (not sauce spoon), finish saucing at the table with one generous 'blob' of potato sauce in the centre of the dish.
Leave sauce on the tray to go back to the KP
Then take the spring truffle mise en place and shave a generous serving of truffle over the top of the dish. We take the truffle and blade back to the pass personally and clean properly before using again.
