Morel Mushroom - 3rd Course Alternative Menu

Elements

  • Morel mushrooms stuffed with a Herdwick mergez sausage farce

  • Salsa verde (Parlsey, taragon, gherkins and mustard)

  • Black garlic ketchup

  • Poached Garden Salsify

  • Foreged wild garlic

  • Leek flowers

  • Lamb broth split with truffle oil

  • Pink fir apple potato sauce (Finished at the table)

  • Fresh Spring Truffle (Finished at the table)

Allergy List

About the Dish

  1. Using a teaspoon (not sauce spoon), finish saucing at the table with one generous 'blob' of potato sauce in the centre of the dish.

  2. Leave sauce on the tray to go back to the KP 

  3. Then take the spring truffle mise en place and shave a generous serving of truffle over the top of the dish. We take the truffle and blade back to the pass personally and clean properly before using again.
